Last week, I was invited to spend the day at the sustainable HQ of HelloFresh – the home of food subscription boxes – and roll my sleeves up and cook their festive offerings. Now that’s an offer you just don’t refuse.
A small select group of us turned up at the stunning new offices, a few steps in my Choos away from Liverpool Street in London.
A far cry from the brand’s wholly humble beginnings in a shoebox round the corner in Old Street, with Patrick, the brand’s co-founder, cooking up a food revolution on his small stove.
The ethos of that first location hasn’t changed, but the aesthetic certainly has.
Fast forward to now and check this out – HelloFresh served 7.2 million meals in January 2016 to 9 countries across 3 continents – talk about going global! I’ve done a Google cookalong with these guys before (read all about that here) and it was great fun, so it was great to go behind the scenes and get involved.
On a guided tour of the cooks crib, we saw pillars made of the leftover pallets their deliveries come in. A wall of planks that Patrick found on eBay for a quid a piece. A cookbook collection to rival the British Library, purchased lovingly and painstakingly for pennies online, again by the man himself.
His mission is to get people cooking again, to love the process, to eat together, forsaking all distractions. To chat, to laugh and to savour over delicious meals which have been put together so seamlessly, all you need to do is lose the packaging, apply the heat and enjoy the magic.
Laid out step-by-tiny-step, not for the hard of thinking, but for the hard pressed for time and at a price point which makes it as affordable as your weekly shop.
No need for half used jars or one-go wonders, all of the HelloFresh ingredients come in minis duly packed to the exact specification of the recipe, lovingly created in their kitchens by the nutritional team for you at home.
I am such a fussy eater (and a lazy cook!), I was worried I’d be really picky from the selection of duck, pork, giant pigs in blankets and prawn dishes in their festive menu. In actual fact I was into everything, each dish even more delish than the one before and not one of them took more than 45 minutes to create from start to finish!
We feasted on our creations and the subscribers to these boxes are in for a treat this coming month of December as Patrick and the gang aim to make Christmas leftovers into festive feats in their own right.

Roast dinners are a favourite in our house – we have all the trimmings and will often have mid-week roasts – Chicken or pork with crispy crackling with apple sauce, beef or gammon cooked in English mustard and served with horseradish and/or English mustard, or lamb with mint sauce or redcurrant/cranberry – lots of veg, Yorkshire pudding, stuffing, roasted veg including potatoes, parsnips, butternut squash and carrots (sometimes adding a little honey a few minutes before dishing up). It is usually just the two of us (and 2 cats, and a fox family that visit nightly for their dinner) – sometimes we have friends over and there’s nearly always enough if someone turns up unexpectedly.

Cottage Pie with a layer of mashed carrot between the meat and the mash. The mash sometimes with parsnip or cabbage (colcannon style) or cheese. Usually a large one that the 2 of us eat over 2 days, sometimes with portions frozen for the grandchilden but it is always delicious and a favourite in this house – simple but nutritious.

I love cooking Jamie Oliver’s spaghetti and meatballs for tea – but with courgetti instead of spaghetti to keep the carbs down! It has enough spice, heat and Italian flavour to tickle your tastebuds! It’s also a cheap meal and easy once you’ve made it a few times. It’s just for me and my other half – we love it!

I cook for between 2 & 4 depending on whether my teens are at home. The favourite family meal for all 4 of us is probably chilli lasagne, which I make using a chilli rather than bolognese for the meat layers and top with lashings of cheese and crushed tortilla chips. Hubby likes it accompanied with home-made garlic bread – again topped with cheese (cheddar & mozzerella this time).
My personal favourite is anything I don’t have to cook 😉
