I am often asked for ideas for quick, healthy snacks and fast family meal ideas, often for websites or magazines.
I am not much of a creator of outlandish recipes, but I seem to have a lot of clever people around me who will proffer some inspiration.
One thing I am super keen on is cutting corners – the faster the better in my book, because we are all busy, right?

Our fave snack of the moment of an evening – anything to stop me from reaching for the family-sized Galaxy Caramel – is this frozen banana with peanut butter and Chocshot topping.
I googled frozen banana bites and was quite shocked at the indulgence level – dipped in a fondue, covered in sprinkles of every kind, or slathered in sugar! Yummy, yes, but ain’t none of them gonna melt your muffin top girl!!!
So here’s my healthy take on the treat…
Healthy because it has those good fats in peanut butter, the sugar is natural fruit sugar and the Chocshot on top is a healthy alternative to real chocolate, made with natural fruit extracts, water, cocoa, rapeseed oil and natural flavours!
So, four super-quick & easy steps and the taste sensation is yours!
1. Slice bananas – I used to do lots of little slices but I love it so much they’ve become huuuge!
2. Slather chosen peanut butter ( always palm oil free, people!!) on said slices. We love Meridian, Pipps, or any good quality, no nasties-added option!
3. Drizzle with Chocshot
4. Pop in freezer for at least an hour
